Here is a great tummy-flattening week of salads to get you into a cropped two-piece or fit-and-flare in no time flat.

There’s nothing like curling up on the couch with a favorite show and a snack, and while you’re watching your favorite E! shows, #RichKids of Beverly Hills and Keeping up with the Kardashians, get the look and the flavor with this similar wedding gown, and Kardashian inspired Chinese Chicken Salad.

Get creative: take the skirt of this Rachel Allan 7134 and pair it with the Lanai Crop to recreate the look.

Believe it or not the Kardashian tastebuds are not all that sophisticated. A look at Kris Jenner’s cookbook, In the Kitchen With Kris, will show you that. The recpies range from simple nachos ala Nicole Brown Simpson, to a pate that uses chicken liver in lieu of foie gras. Even Kanye has been known to chow down on Doritos and In N Out Burger on the regs. There is one recipe that they left out, however.

If you watch KUWTK you’ve seen those gorgeous salads the Kardashian sisters always eat from clear plastic bowls. The Kardashian favorite salad is the famous Health Nut Chinese Chicken Salad. The choice salads come from a restaurant called Health Nut located in Woodland Hills/Calabasas. If you can’t make it out to southern California for a truly Kardashian salad, here’s our take on the famous of bowl of goodness.

Health Nut’s Chinese chicken salad is actually a bit underwhelming. We’ve amped ours up a bit with a few swaps.

Health Nut uses picked ginger, lettuce, and fried chow main noodles for their Chinese Chicken salad. I’m not too keen on any any of those things, especially pickled ginger because prepared brands typically contain artificial colors and sweeteners, so I substituted cabbage for lettuce, grated radish for pickled ginger, and crushed rice crackers for the chow mien noodles.

Kardashian Health Nut Inspired Chinese Chicken Salad

1/2 cup shredded cold rotisserie chicken breast

2 cups finely shredded angel hair cabbage

2 grated carrots

3-4 grated radishes

1/4 cup finely chopped cilantro

2tbs kraft light asian dressing (this has HFCS in it as the sweetener so making your own with agave or honey might be better if you are really counting carbs. This dressing has 6 grams of sugar per serving.)

a few drops of sesame oil

top with crushed rice crackers, the teriyaki or spicy lime are great!

If you wish chopped peanuts, almonds, or cashews ( the thai chili flavor cashews from Trader Joe’s are super yummy but contain rice bran oil), lime zest, scallions, a splash of ACV (apple cider vinegar) are also nice additions.

Getting in shape for the wedding is tough, especially when you’re constantly exposed to tempting foods all around.

Weather you’re getting in shape for a wedding or just slimming down for summer fashions, salads are always a great way to get in your veggies and fiber. They fill you up, and if you choose a healthy dressing and limit the extras, salads are a great way to help get you to your weight loss goal. Here’s another great salad to help you along the way.

Salad #2:  Fruit, Nuts, Cheese, and Greens (Vegetarian), Inspired by Kourtney’s favorite cobb salad.

This vegetarian salad does not use chicken in leu of the cheese and nuts, which provide protein. You will not miss the chicken. It can easily be made vegan bit leaving out the cheese.

Kale or spinach, arugula, whatever greens you like best

Nuts, pecans, pistachio, sunflower sees, or soy nuts

Fruit apple, pear, strawberries, blueberry, mango whatever you like or a combination

Cheese: Cumbled blue, goat, or feta

Black Pepper fresh grated

balsamic vinegar

Red peppers, white meat chicken, a hard boiled egg, garbanzo beans, black beans, are all great extras for this salad.

Dieting is hard. : (  When all you want is greasy Mexican food, you Mexi-CAN with this super salad!  This is like a low carb version of Enchiladas.

Tortilla-less Chicken Enchilada Warm Salad

1/2 cup Shredded Rotisserie Chicken

1/4 cup Rick Bayless Red Enchilada Sauce (in the bag available at Walmart) it has wholesome ingredients and is super low-cal.

Generous handful of Shredded angel hair cabbage

A little sprinkle of grated cheddar cheese (optional)

A spoonful of Greek yogurt (optional)

Frozen corn niblets, pickled Mexican carrots, jalapeños, and black beans also make great toppings for this “salad” type entree.

Swap out lunch, breakfast, or dinner, for an amazing salad.  To make a week’s worth of interesting salads that or worthy of any restaurant at a fraction of the price, here’s your shopping list.

Here’s your shopping list to make all three salads:

1 rotisserie chicken, do not eat any skin and give the dark meat to your cat or dog. (Buying chicken breasts and cooking them yourself may be easier for you, but in the summer, spend your time exercising, and who wants to heat up their home in the heat anyway?)

throw some thermogenic herbs and spices in there whenever you can. you probably won’t even taste  them them and it’s a win win on fiber and antioxidants either way. it can’t hurt so why not.

Bunch of Kale

Bag or box of Spinach

Radishes

Cilantro

Parsley

Black Pepper Corns

Turmeric

Nuts or seeds

Fresh fruit or berries, Pears, apples, blueberries, strawberries, blackberries,

balsamic vinegar

A small bag of carrots or pregrated carrots

Sesame oil

Cabbage, whole or pregrated, I can never seem to get the same thin texture of the bagged Angel Hair Cabbage at Walmart, so I usually just buy that. Maybe I should get a mandolin slicer.

Feta, Blue, or Goat cheese

Health nut sells their own dressings at their restaurant in Calabasas, but they don’t ship them as of this time. The Kraft Lite Asian Sesame with a few drops of sesame oil is very close.

Hint: When making salad dressings, leave out the oil, unless it’s a flavorful one like the sesame oil in the Chinese chicken salad. you won’t even miss it. replace with a little sprinkle of Himalayan pink salt or a squeeze of citrus.

If you have turmeric, freshly grated black pepper, and chia seed on hand, go head and throw them in!
